SURFSIDE FAT'S THAI Apple Pie

  • 5 large (about 2 1/2 lb. total) granny smith apples, peeled, cored, and sliced 1/4-inch thick
  • 1 cup granulated sugar
  • 3 tbs. firmly packed brown sugar
  • 3/4 cup all-purpose flour
  • 3/4 tsp. ground cinnamon
  • 1/4 tsp. pepper
  • 3 tbs. butter or margarine
  • coconut or vanilla ice cream (optional)

In a 9-inch square pan, mix apples with 1/3 up granulated sugar, the brown sugar, ginger, and lime juice. Shake pan to level fruit.

In a small bowl, rub together remaining granulated sugar, flour, cinnamon, pepper, and butter to firm fine crumbs, then squeeze into lumps and scatter evenly over apple mixture.

Bake in a 375* oven until apples are tender when pierced and topping is golden brown, 50 to 55 minutes. Serve hot or cool, spooned into bowls and topped with ice cream. Makes 6 to 8 servings.
