MOCK EGG SALAD

- 1 lb. firm tofu (surata is the best)
- 1/4 cup chopped celery
- 1/4 cup green or red pepper
- 1 tbs. diced jalepeno (optional)
- 2 tbs. diced pickles

- 1 tbs. prepared (yellow) mustard
- 1 tbs. honey or brown rice syrup
- 2 tsp. apple cider vinegar
- 1/2 tsp. turmeric
- 1/2 tsp. onion powder
- 1/2 tsp. celery seed
- 1/2 tsp. black pepper
- salt to taste
Crumble tofu into a medium mixing bowl.
Combine the mustard, honey, vinegar, turmeric, onion powder, celery seed and pepper in a
small bowl. Pour over tofu and mash together well. Add the celery, green pepper pickles,
(and jalepeno) and mix together well. Let chill a few hours before serving
This will last 4-5 days. Add a little lemon juice to make it last longer.
Serving size: 1/3 cup. Per serving: 84 calories, 4g total fat, .6g saturated fat, 7g
protein, 7g carbohydrate, 67mg sodium, 0mg cholesterol.
