Almond-Orange Sauce

Orange, almond, and ginger mingle delicately in this sauce. It is good enough to eat with a spoon all by itself, but it is especially good on millet pilaf.

  • 1 cup almond butter
  • 1/2 cup boiling water
  • 1/2 cup orange juice
  • 1 tbs. soy sauce
  • 1 tsp. minced fresh ginger
  • 1/2 tsp. orange rind
  • salt, to taste (optional)

Place the almond butter in a medium-small bowl. Add boiling water, and carefully mash with a spoon until the mixture is uniform. Add remaining ingredients and mix well. Salt to taste. Serve warm or at room temperature over hot pilaf.

Preparation time 10 minutes. Yield: 2 cups.
