SPINACH SAI BHAJI--back to the recipe list
Thaw spinach. Soak lentils in warm water for 10-15 minutes. Put a small amount of oil in pressure cooker. Put onions, garlic adn ginger in oil and fry until onions are golden brown. Add whole cumin seeds (about 1/2 teaspoon) Add spinach, peeled and cut potatoes, peeled and cut carrots, chopped tomatoes, and lentils. Add 3/4 cup of water and about 1/4 teaspoon of each spice. Cover pressure cooker and keep on high until it whistles. Then put on low heat for 20 minutes. Turn off and allow pressure cooker to cool before opening. Then, with a wooden spoon, mash potatoes and carrots with the spinach. --back to the recipe list |
