Stir-Fry with broccoli

  • 1 tbs. oil
  • 1 large onion, diced
  • 1 red or green pepper
  • 2 tbs. each garlic and ginger
    ~~~

Equal parts to make a total of 3 cups:

  • tamari
  • maple syrup
  • 1/4 cup rice wine vinegar
    thicken with arrowroot)
    ~~~
  • 1 lb. firm tofu
  • 2 cups chopped broccoli
  • 1 tbs. oil
  • garlic powder
  • ginger
  • crushed red pepper

SAUCE
Sauté onion and pepper with the garlic and ginger. Add tamari, maple syrup and vinegar, and bring to a slow boil.

STIR-FRY
Stir-fry tofu and broccoli until tofu is the color of cooked egg. Dust with garlic, ginger and pepper. Stir-fry until browned, and add to the sauce.
