Stir-Fry with broccoli

- 1 tbs. oil
- 1 large onion, diced
- 1 red or green pepper
- 2 tbs. each garlic and ginger

Equal parts to make a total of 3 cups:
- tamari
- maple syrup
- 1/4 cup rice wine vinegar
thicken with arrowroot)

- 1 lb. firm tofu
- 2 cups chopped broccoli
- 1 tbs. oil
- garlic powder
- ginger
- crushed red pepper
SAUCE
Sauté onion and pepper with the garlic and ginger. Add tamari, maple syrup and vinegar,
and bring to a slow boil.
STIR-FRY
Stir-fry tofu and broccoli until tofu is the color of cooked egg. Dust with garlic, ginger
and pepper. Stir-fry until browned, and add to the sauce.
