Tofu Stroganoff

TOFU SAUTÉ
Sauté 1 lb. firm tofu in canola oil as needed until it is the color of cooked eggs. Dust with:

  • garlic powder
  • basil
  • nutritional yeast

SAUCE

  • 1 large onion, diced
  • 1/2 lb. mushrooms, sliced
  • 1 tbs. garlic

Sauté these ingredients together in oil. Reduce heat and add

  • 2 tbs. tarragon
  • 1 tbs. thyme
  • 1 tsp. black pepper

Simmer on low heat, and add:

  • 1 box soy milk
  • 1/4 Dijon mustard
  • 1/4 cup tamari

Thicken by whisking in flour as needed. Serve over sautéed tofu with fresh chopped parsley as a garnish.
