VEGAN TIRAMISOU

- 1 lb. soft tofu, drained and crumbled
(surata is the best)
- 1 cup organic unrefined sugar
- 1/4 cup light soy milk
- 1/2 cup canola oil
- 1 1/2 tsp. vanilla
- 1 1/2 tsp. almond extract (optional)
- pinch of salt

- 1 package lady finger or other flat
cookies
- Coffee, cocoa powder, coffee or
chocolate liqueur to top.
Whip tofu, sugar, soy milk, oil,
vanilla and salt in a blender until completely smooth.
Line the bottom of a square baking dish with some of the coffee-soaked cookies. Pour 2/3
of the tofu mixture over and top with another layer of cookies. Pour the remaining mixture
on top, and freeze for at least 4 hours. Sprinkle cocoa powder and liqueur over the top
before serving.
NOTE: The tofu, sugar, milk, oil, salt and vanilla can be blended together and served
chilled for an excellent vegan custard.
