VEGAN TIRAMISOU

  • 1 lb. soft tofu, drained and crumbled (surata is the best)
  • 1 cup organic unrefined sugar
  • 1/4 cup light soy milk
  • 1/2 cup canola oil
  • 1 1/2 tsp. vanilla
  • 1 1/2 tsp. almond extract (optional)
  • pinch of salt
    ~~~
  • 1 package lady finger or other flat cookies
  • Coffee, cocoa powder, coffee or chocolate liqueur to top.

Whip tofu, sugar, soy milk, oil, vanilla and salt in a blender until completely smooth.

Line the bottom of a square baking dish with some of the coffee-soaked cookies. Pour 2/3 of the tofu mixture over and top with another layer of cookies. Pour the remaining mixture on top, and freeze for at least 4 hours. Sprinkle cocoa powder and liqueur over the top before serving.

NOTE: The tofu, sugar, milk, oil, salt and vanilla can be blended together and served chilled for an excellent vegan custard.
